Quick pics from recent dinners

I have holiday company so I will just post some pics right quick. Most of these are from the vegan on the cheap cookbook. I have really liked everything (as has the Pookie) I have made from that book. Likely, I will be making more of those recipes in the near future.

Already exchanged presents with family, and used my iTunes gift card to buy veganomicon (super happy bout that, thanks sis n pher!). Pookie rewarded a year of mostly frugal me by getting me what I wanted most this year... The iPad. I have an itouch, but reading on it can get down right squinty, and my eyes aren't getting any younger!

On a side note, I have been doing serious blog reading lately, and notice the more I read the more ingredients I feel I should acquire. Lol.
Why don't I have urad flour? Hmm? Think I might try to do another bulk food order this month and restart being cheap in January.

S- ff. Refried beans mixed with rotel, nutritional yeast sauce
L- white bean and kale risotto with 1/2 baked sweet potato
D- comfort loaf from vegan on the cheap, roasted potato, carrot, radish, garlic







Monday

B- oatmeal, pumpkin puree, chia seeds
L- white bean & kale soup with smokey tempeh bits, baked potato
D- homemade veggie pizza

Tuesday

S- 1/2 baby seedless watermelon
B- ff refried beans mixed with rotel, nutritional yeast sauce
L- comfort loaf, roasted veggies, steamed cauliflower

White bean and kale risotto

Today Pookie and I have been cleaning house.

Saturday

B- oatmeal with 1T of almond butter
L- fat free refried beans mixed with rotel, on 2 corn tortillas, topped with 1c baby spinach, salsa, 1T better than sour cream (impulse buy yesterday), 1/3 avocado, instant cheez from the uncheese cookbook.
S- 1/4 block tofu, 1/4 roasted red pepper, 6 mushroom
D- white bean & kale "risotto" from the vegan on the cheap cookbook

I let everything go. The diet, the exercise, my pants size, etc.

I am officially at my highest weight. I am once again inspired to blog in hopes of keeping me better on track.

I think it's a little silly of me that I put on weight after going vegan (no reflection of course on veganism). I am very sure all the greasy potato chips, cookies, and wine played more of a role.

I am changing the site name again. I am not sure about doing the weight watcher program right now. I cook most of our food from scratch or near it, and think homemade vegan better reflects my lifestyle.

I had a doctor's appointment yesterday, so Subway snuck into my food log.

Dec. 3

week of meals, engine2, games

This week went by fast without much in the way of inspiration food-wise. I find that I can be a bit boring in my day to day food choices (not the best for a food journal blog). I am wanting to cut back on some of the more processed choices I make. I am sure they have a place, but putting them in it has proven more difficult than I like.

I was online searching for more whole food type recipes (without fancy smancy stuff in it), and came across Engine 2. There are several recipes online, and I was able to find a copy of the book at the library. I liked the panini but the banana french toast stuck all over the griddle and left me with just gooey bread to enjoy.

This week Boo bought a new game (which is rarrrree) called Elemental. Seems like it has been ages since a good mmorp has been released (which leaves me in wow and sis in eq2). He is knee deep in it and surfaces only long enough for work and food. He says the user interface is a little counter-intuitive but having finally gotten the hang of it, seems to be quite addicted.


I picked DDR to try out on the Wii. I have the rhythm of a sloth (and the body to match, badda-bing), and just know I am going to look quite silly trying it out. I'll post more once I get off my biscuit and try it.

Monday - 13th

Welp, I am not sure what I had... I know we didn't go out to eat or anything. I am always a little concerned when the camera is empty for a day, doesn't bode well at all for waist watching. ;)

Tuesday - 14th


B: tempeh bacaon, romaine, tomato, bagel thin, clementine
We did order a pizza today (one for each of us, as I didn't want his cheeses on my pieces, lol). He got the spinach alfredo, and I ordered the veggie without cheese from papa johns.
It was alot of pizza so it was lunch/dinner today, with a bit leftover for Wednesday.

Week of meals, liquid gold, my fail freezer

This week's food log:

Seems like this is the week of tofu scrambles! I don't feel like I am in a rut. I am enjoying the veggies that are sold at our (Indiana) farmers market. While I will grant that our produce is a bit limited compared to Cali, overall I am pleased with it.

I was a little worried about getting certain things in (nutritionally speaking), and have reread some of the chapters (in becoming vegan) that relate to those items. I detest the thought of having to get things in pills specifically. It looks like I will have to buy DHA pills though, and on ebay they are rediculously expensive (imho). *frownie face*

I recieved my calcium sulphate in the mail the other day so I will be able to make tofu with calcium (yay).

I also made up a batch of the Liquid Gold dressing from becoming vegan. It takes care of both omega3s & b12 (a bit shy on the b12, but I haven't been vegan for long). It is an acquired taste. lol. Right now I have it on either baked potatoes or salad.

The fridge has been acting up (yknow icy caves in freezer with an iciey floor to match the drapes, condensation in the fridge- the great veggie killer it seems like), so today I defrosted it while things were in tubs of ice.

Most things survived the deicing of the vents. These things didn't stay frozen & will be pushed ahead in the que:

24 bagel thins (Pookie is tearing these up, which is good I can do about 2 a day tops)
6 talapia fillets (Pookie's fishy bidness)
8 slices of tomato basil bread
6 pieces of apple almond cake
3 boca vegan burgers
2 amys vegan burger
3 pints of blueberries (this is all me)

Anyhow that is why I had the boca burger taco salad. It was ok. Maybe more seasoning next time lol.

Thursday- 9th










Well- that was a pretty icky breakfast. lol
I had some veggies that I needed to use before they turned, and I am not a morning thinker so..
Eggplant, red cabbage (hence the delightful color), red onion, shroom, braggs, red potato with 1T liquid gold
spicy chkn patty,baby spinach mix, red onion, mustard, flat out fold flat bread, salad with 1T liq. gold, corn on the cob


Friday- 10th











Tofu scramble (tofu, onion, zucchini, summer squash, shroom, red potato)
ppk spicy tempeh sushi filling, 3c alfalfa sprouts (instead of rice), 2 pieces of nori
Indian eggplant (Baingan Bharta)over basmati - This was a big hit! I had to make it twice just to get seconds (and that is all I got, seconds) lol.


Saturday- 11th

Sunday- 12th

L: foot long subway veggie delight on wheat, with ff sweet onion sauce
D: boca vegan burger, spinach, mushroom, alfalfa sprouts, tomato on artisan flat bread with green beans & clementine
s: Sea salt kettle chips




Sept. 4th
B: tofu breakfast burrito

My menu for the 25th - 29th

I missed the farmer's market since I was under the weather, which means I had to make something other than peppers, zucchini, and eggplant (frownie face).

I think Pookie was ready for some different foods, so I guess it worked out just fine.


Wednesday - 25th

B: quinoa kitchari with braggs & hot chili sauce
L: sweet potato curry with spinach and chickpeas over brown rice
D: kale, mushrooms, evoo, over red potatoes
s:Fruit smoothie- 2T better than milk, 1T flax, 2c Kale, 1/2 banana, 5 strawberries
s2: 2 servings potato rounds



Thursday - 26th

B: steel cut oats, 1/2c blueberries, 1T flax
L: fit&active vegetarian chili over red potatoes
D: tabbouleh
s: Fruit smoothie





Friday - 27th
