Feb. 15/16

I am often caught in a state of blah. Usually it shows in my diet, exercise, this blog, etc. I am hoping it's just the winter blues. Maybe it's having to tighten our fiscal belts even more, or that my sis has left for Texas.

My sister has the right idea, she is taking a month long vacation to Texas! She has missed all this wicked cold snow, lol. I have missed her being here and our ciggy break chats. She is hoping to stay there, and I hope she does. She could use some good in her life, and she hasn't found that here.

The menu is a little so-so, but I had some leftovers to eat up, etc.

I had a baking day sorta, I make pocket bread for my boo's lunches/snacks. It's time consuming, and not my favorite thing to make. He eats them up though lol.

Feb 15-

I got up late, so I waited a bit and just had dinner with boo.

We had mont-jack chicken, an organic salad kit *was on sale*, and I let him pick the veggie... so corn lol







For lunch, I needed to use up some leftover sauerkraut, so i had 1c of it with 1/2 of an aldi's brand polish sausage , & 1/2c mashed potatoes.


Then I started making boo's pocket breads... all sixty of them.
All I put in them was swiss cheese, per his request. I had one for a snack- 2.17p
Figured since I was in the kitchen might as well make a batch of ww cupcake brownies *my first time making these*. I didn't have a regular muffin tin, I am not really a muffin maker, lol.
I did, however, see this adorable mini muffin tin at goodwill, so I used that. Instead of 12, I ended up with 36 minis about the size of the hostess 100 calorie packs. 3= 1.5 p


For dinner I was pretty "done" with cooking, so I grabbed a chickpea burger out of the freezer, had it on an arnold thin, slice of ww cheese, dijonaise. Pam fried 2 pts worth of potato, and served with 1/2c of grapes.

Feb. 16-

Today I have been looking at a lot of blogs in search of a bean recipe for boo's lunches. One that isn't burritos, as he's eaten those for months now. It is slow going, and I keep getting distracted by frugal ideas and oamc things lol. I read on My Frugal Fun life about no poo shampoo, and am going to try it when I run out. I already make our detergent, and it seems like a natural progression to me lol.

I am also wanting to try to make paneer, so I can make saag paneer. I had great success making the ricotta with her recipe *which can be made with nf powdered milk*.

Breakfast was apple pie spice steel cut oats for 3p

I think it wanted some splenda or something in it, but I had it as is. Made a double batch and will be eating for next few days.

Lunch was a repeat of yesterday, sauerkraut, 1/2 sausage, 1/2c tato. One more day I "get" to enjoy this for lunch lol.
Snack was a kroger brand lite yogurt for 1.5p




For dinner I had leftover montjack chicken, green beans, potato with 2T icbinb.

Snack was a light string cheese & 8 aldi's brand caramel rice crisps


Points total of 26.8
